- 2 slices wholemeal bread
- ½ a 210g tin of pink salmon, drained
- 1 tbsp reduced-fat mayonnaise
- 1 small piece of cucumber, chopped
- 4 or 5 cherry tomatoes, halved

Drain the salmon and remove the bones, then mix the salmon with the mayonnaise. Add a squeeze of lemon, if you have one to hand.
Spread the mixture on 1 slice of bread, sprinkle over the cucumber, and top the sandwich with the remaining bread. Serve with the cherry tomatoes.
