Salmon and cucumber sandwich recipe

Tinned salmon, mayonnaise & cucumber sandwich

  • 2 slices wholemeal bread
  • ½ a 210g tin of pink salmon, drained
  • 1 tbsp reduced-fat mayonnaise
  • 1 small piece of cucumber, chopped
  • 4 or 5 cherry tomatoes, halved

Drain the salmon and remove the bones, then mix the salmon with the mayonnaise. Add a squeeze of lemon, if you have one to hand.

The fish bones in tinned salmon are edible and contain calcium, but remove them if your child does not like the texture. Tuna also works well instead of salmon.


Spread the mixture on 1 slice of bread, sprinkle over the cucumber, and top the sandwich with the remaining bread. Serve with the cherry tomatoes.

Just double the recipe if you want to use up the whole tin of salmon – keep the leftover mixture in the fridge for tomorrow.
