Pork and apple casserole

A tasty duo of pork and apple, cooked with mixed vegetables and served with potatoes and carrots. Freeze the extra portions for handy future meals.

  • ¼ small onion, peeled
  • 1 wedge green pepper
  • 1 medium mushroom
  • 1 slice courgette
  • ½ small apple, peeled and cored
  • 1 tsp vegetable oil
  • 100g minced pork
  • ½ garlic clove, peeled and crushed
  • 50ml water
  • 50g canned tomatoes, chopped
  • 1 medium new potato
  • 1 heaped tbsp carrot, peeled and sliced


  1. Dice the onions, mushrooms, peppers, courgettes and apples.
  2. Heat the oil and fry the pork mince with the onion and garlic for 3-4 minutes.
  3. Add the peppers, courgettes and mushrooms and cook for 2 minutes
  4. Add the apples, tomatoes and water to the pan. Cover and simmer for 10-15 minutes. Add a little more water during cooking if needed.
  5. Meanwhile bring a small pan of water to the boil, add the potato and cook for 5 minutes, then add the carrot and cook for a further 5 minutes until both are cooked. You can microwave if preferred.
  6. Chop or mince the cooked casserole with cooked mashed potatoes to the desired consistency. Serve a ¼ of the mixture on a plate with the new potatoes and carrots as a finger food.

Try with other vegetables such as broccoli or frozen mixed veg.
