Beef bolognese recipe

A classic that can be enjoyed with the rest of the family too – simply serve as is instead of chopping up. Freeze extra portions for handy future meals.

Ingredients

  • ½ onion, peeled (30g)
  • ½ small pepper (30g)
  • 1 tsp vegetable oil
  • 90g minced beef, lean
  • 2 mushrooms (30g)
  • 150g chopped tinned tomatoes
  • 5 basil leaves, chopped (optional)
  • 40ml water
  • 15g spaghetti (1 portion)

Method

  1. Finely dice the onion and pepper. Heat the vegetable oil in a saucepan, add the onion and cook for 1 to 2 minutes until softened.

  2. Add the mince to the pan and cook for 3 to 5 minutes until starting to brown.

  3. Information:

    Swap the beef mince for lentils or soya mince for a vegetarian alternative.

  4. Dice the mushrooms, then add to the pan along with the tomatoes, basil (if using) and water.

  5. Cook for 20 to 30 minutes until the meat and veg are cooked and the sauce has thickened.

  6. In the meantime, bring a pan of water to the boil, add the spaghetti and cook for 10 to 12 minutes until soft. Then drain.

  7. Put the pasta in a bowl, place quarter of the bolognese mix over the top and serve with a fork. Chop the meal if preferred.
