Mashed avocado cheese on toast recipe
Make a healthier version of cheese on toast, it's delicious!

Ingredients
- 4 slices wholemeal bread
- 2 medium size ripe avocados
- 4 tomatoes, sliced
- 40g reduced-fat hard cheese, grated
- 1 pinch of ground black pepper
Extra Tip:
Add 1 tablespoon of chopped fresh coriander to the avocado for a spicy hit.
Method

Toast the slices of bread.

Meanwhile, peel, stone and mash the avocados with a fork. Spread the mixture evenly over the toast and arrange the tomatoes on top. Season with black pepper.
Information:To check that an avocado is ripe, gently press the pointed end, it should 'give' a little.

Sprinkle the cheese on top and grill for 2 to 3 minutes until melted and bubbling.
Information:Grate the cheese finely to make it go further.
